perf tools: Add dsos__hit_all()

Add ability to mark all dsos as hit. This is needed in the case of Instruction Tracing. It takes so long to decode an Instruction Trace that it is not worth doing just to determine which dsos are hit. A later patch takes this into use. Removing event types data storing/reading to/from perf data file as it's no longer needed. The only user of this data 'perf timechart' was switched to use tracepoints handler callbacks. The event_types offset and size stay in the perf data file header but are ignored from now on.
